The CGU Gelato shop Internship is a 2-day full immersion course designed to give you a hands-on approach to working in an American Artisan Gelato shop.
The CGU Gelateria Internship was developed for students who wanted a real-life experience of the daily tasks, routines, and artisanship of a fully functional downtown Gelato Shop. This real-life experience is intended to show the ins and outs of both the back-of-house Gelato production and the front-of-house, such as sales interaction with clients. Finally, the intern will also put to use their knowledge of working with frozen dessert equipment and learn other procedures typical of a frozen dessert business.
Daily Agenda
Day 1 - Saturday (pm Start time) 2.00 pm -11.00 pm
• Introduction
• Explanation of Daily task and hygiene standards
• Production of gelato
• Sales to the public
• Review of material from class
• Conserving of leftover product (cleaning of the case and pinting of flavors)
• Cleaning and closing procedures
Day 2 - Sunday 9.00 am -3.00 pm
• Production of Bases to be spun for the day for one or both shops if necessary
• Production of Sauces or Mix ins if necessary
• Production of pops or cakes if necessary
• Production of gelato utilizing the hot method in the Ready
• Scooping and working the register
• General Cleaning
• Closing Procedures
• Evaluation and Q&A
